Ingredients
Tomato marmalade
- 2 lb tomatoes
- 1/4 c lemon juice
- 20 oz sugar
- vanilla bean
Tomato Gin Tonic
- 1/2 c tomato marmalade
- 6 tbsp. gin
- 2 c tonic, chilled
- 2 lemon slices
- 2 sprigs of dill or other herb
Preparation
Tomato marmelade
- Score an x on the bottom of the tomatoes, then boil them for 90 seconds. Rinse in cold water briefly and remove the skins.
- Chop the tomatoes.
- Cut and scrape the vanilla bean.
- Add sugar, vanilla bean and pod, and chopped tomatoes to a pot and simmer on medium high for 10 min, stirring frequently.
- Take off the heat, add lemon juice.
- Let the marmalade cool, remove the vanilla pod, lastly set the marmalade in a jar in the fridge.
Tomato Gin Tonic
- Place 2 tbs of tomato marmalade at the bottom of each glass.
- Add 1/2 cup tonic per glass, and 3 tbs gin, stir briefly. Top with a lemon slice and a sprig of dill or other Scandinvian herb (pictured is Röllika).
