Ingredients
Cocktail
- 4 bags Earl Grey tea
- 1 c water (for tea)
- 2 c grapefruit juice (or squeeze 4 large grapefruits)
- 1/2 c St. Germain liqueur
- 3 tbsp. vodka (optional)
Meringue
- 1 egg white
- 1/4 c sugar
- 1/8 c water (for simple syrup)
Toppings
- 8 sprigs fresh thyme
- 1 pkg edible flowers
Preparation
- Heat 1 cup water in microwave for 3 minutes (don't burn yourself!) and set 4 bags of earl grey to steep for 5 minutes
- Set tea aside to cool
Meringue
- Simmer 1/8 cup water and 1/4 cup sugar on medium high heat for 3 minutes to make simple syrup
- Whisk egg whites until it forms a meringue
- Slowly add simple syrup tomeringue while continuing to whisk
Assembly
- Once tea is cooled combine with 2 cups of grapefruit juice, and 1/2 cup St. Germain liqueur (+optional vodka if desired)
- Top with meringue, thyme & edible flowers
