‘Passionita’

Ingredients

Cocktail

  • 240 grams frozen passionfruit pulp
  • 3/4 cup heavy cream
  • 1 cup sugar
  • 1/2 cup silver tequila
  • 1 1/2 cups crushed ice

Rim

  • 1 lime (zest)
  • 2 teaspoons sugar
  • 2 teaspoons coarsely ground rock salt
  • 1 teaspoon coarsely ground black pepper

Instructions

Cocktail

  1. Combine 1 cup sugar and 3/4 cream in a pot over heat, just until it bubbles.
  2. Add in frozen passionfruit and whisk until dissolved.
  3. Remove from heat and stir in tequila. Let cool.

Assembly

  1. Combine 2 tsp sugar, 2 tsp salt, 1 tsp pepper and zest of 1 lime.
  2. Put water on a plate and dip the rim of the glass, and dip into the sugar/salt mixture. (This can be done ahead in dry climates).
  3. Crush ice and serve.
