Ingredients

Salmon tartar

    Garnish

    • Blue corn flower petals
    • Cilantro leaves
    • 400 grams salmon (highest quality possible, ask for sashimi grade)
    • 10 grams cilantro (20 sprigs)
    • 2 teaspoons grated ginger (10gr)
    • 2 teaspoons fish sauce
    • 2 teaspoons rice wine vinegar
    • 5 teaspoons japanese soy sauce
    • 2 tablespoons lime juice (2 limes)
    • 30 grams red onion

    Crispy rice papers

    • 2 Rice papers
    • 2 cups oil for frying

    Instructions

    Salmon tartar

    1. Dice the salmon
    2. Finley chop the onion, grate the ginger, and chop cilantro (leaves and branches).
    3. Add onion, lime juice, ginger, cilantro, soy sauce, vinegar, and fish sauce the to salmon.

    Crispy rice papers

    1. Heat up frying oil TO 350F/175C and deep fry rice paper pieces 1 by 1.
    2. Drain on paper towels.

    Plating:

    1. Put tartar on crispy rice papers, garnish with flower petals and cilantro, and eat right away.
